You get this scrumptious, moist, chewy cookie that feels like you’re eating a pillow-soft cookie. For this recipe, I added just a teaspoon of almond extract. The almond flavor is not super noticeable, but if almond is not your favorite flavor feel free to remove it and stick with just vanilla extract.

- Combine flour, cornstarch, and baking powder, and sift the flour mixture twice into a medium bowl. Set aside.
- Cream together the butter and cream cheese with an electric or stand-up mixer. Mix thoroughly.
- Add sugar and beat for 1 minute.
- Add egg and beat to combine. Add extracts and beat until combined.
- With a paddle attachment attached, add flour mixture a little at a time to wet ingredients. Mixing till totally incorporated, chill the dough for at least an hour.
- Preheat the oven to 375 degrees F.
- Line the baking sheet with parchment paper.
- If the dough is sticky, use flour on your hands to roll out 1 to 2-inch balls. Place cookie balls on the baking sheet. Carefully press down on cookie dough with a flat surface lightly
- Bake for 10 minutes or until light golden edges. Remove cookies to a wire rack after 1 minute. Enjoy!
