How to make Soft & Chewy Oatmeal M&M Cookies
- Wet Ingredients: Combine the sugar, and softened butter, using a hand mixer.
- Beat it at medium speed until the mixture is smooth and creamy.
- Add the eggs and mix on high until combined about 1 minute.
- Scrape down the sides and bottom of the bowl as needed.
- Add vanilla, and mix well.
- Next, combine the dry ingredients, the flour, baking soda, baking powder, salt, and cinnamon in a medium-sized bowl. Set it aside.
- Slowly add the dry ingredients to the wet ingredients, and mix at low speed.
- Beat in the oats, M&M candies, and walnuts (optional) at low speed.
- The dough will be thick, yet very sticky. Chill the dough for 30-60 minutes in the refrigerator.
- Line the large baking sheets with parchment paper or silicone baking mats. Set aside.
- Scoop dough with an ice cream scoop(2 tbsp) or cookie scoop. Place 2 inches apart on the baking sheets. For monster-size cookies, add another tablespoon of dough.
- Bake for 10-12 minutes until lightly browned on the edges.
- Remove from the oven and let cool on a baking sheet for 1-2 minutes before transferring to a wire rack to cool completely.
