What is a Biscotti?
Fun Biscotti Trivia - Bet you didn't know that the word "biscotti" comes from "biscotto," the Italian term for any type of cookie! 
These sweet treats are made by baking dough logs, letting them cool, and then popping them back in the oven for another round of baking. 

🍋Ingredients in Italian Lemon Biscotti?
Salted butter - softened and room temperature
Granulated Sugar
Eggs - Room temperature
All-purpose flour
Baking powder - Baking powder is used to increase the volume and lighten the texture of baked goods.
Lemon Extract
Lemon Zest

Lemon Glaze
Powdered Sugar ( Confectioners' sugar)
Lemon juice

🍋How to make Italian Lemon Biscotti 
  • In a mixing bowl, combine the room temperature (do not skip) softened butter and sugar, and blend on medium speed until light and fluffy. 

  • Add eggs, lemon extract, and zest to wet ingredients and blend for 1 minute. Scrape down the sides and bottom of the bowl.

  • Add the flour, salt, and baking powder. Gently mix the dry ingredients on low speed until combined. When all the flour is absorbed, stop mixing. Scrape down the sides and bottom of the bowl.

  • Lightly dust the parchment-lined baking sheet and your hands. 

  • Transfer dough to the floured baking sheet and form into a log 1/2 inch thick.

Italian Lemon Biscotti

  • Bake for 30 minutes, until golden brown. Let rest for 10 minutes, before slicing with a serrated knife and re-baking for 10 minutes on each side.

Italian Lemon Biscotti

Let cool for 10 minutes. Drizzle the glaze over the tops of the biscotti. Allow the glaze to dry.
