What's in Oatmeal Jam-Filled Bars

Dry Ingredients
Oat, old-fashioned
All-purpose flour
Baking soda
Brown sugar
Cinnamon and salt

Wet Ingredients
Butter, unsalted
Jam or preserves
Vanilla extract

How to make Oatmeal Jam Filled Bars

πŸ’—In a medium bowl, combine, flour, oats, cinnamon, salt, and baking soda. In a large bowl, whisk slightly melted butter, brown sugar, and vanilla until well combined. Add dry ingredients and stir with the mixture until combined.

 πŸ’—Pull out about 1 1/2 cups (a little less than half) of the cookie dough and set that portion aside (for topping). Drop the remaining dough into the prepared pan and press it down into a flat layer. Bake for 10 minutes.

πŸ’—Remove from the oven and carefully spread the jam on top of the cookie base. 

πŸ’—Take the reserved cookie dough and crumble it over the top of the jam layer. Return to the oven and bake for 14-16 more minutes, until the topping is light golden brown. Place the pan on a wire rack to cool

πŸ’—Let cool for 30 minutes, then chill for 30 minutes or more to firm up.

These bars freeze really well. I recommend cooling completely and slicing into bars before freezing.
