This dish comes together in a matter of minutes and is delightful whether served warm with a scoop of ice cream, chilled, or at room temperature. The best part? What's in Oatmeal Jam-Filled Bars

Dry Ingredients
Oat, old-fashioned
All-purpose flour
Baking soda
Brown sugar
Cinnamon and salt

Wet Ingredients
Butter, unsalted
Jam or preserves
Vanilla extract






How to make Oatmeal Jam Filled Bars

💗In a medium bowl, combine, flour, oats, cinnamon, salt, and baking soda. In a large bowl, whisk slightly melted butter, brown sugar, and vanilla until well combined. Add dry ingredients and stir with the mixture until combined.

 ðŸ’—Pull out about 1 1/2 cups (a little less than half) of the cookie dough and set that portion aside (for topping). Drop the remaining dough into the prepared pan and press it down into a flat layer. Bake for 10 minutes.

💗Remove from the oven and carefully spread the jam on top of the cookie base. 


💗Take the reserved cookie dough and crumble it over the top of the jam layer. Return to the oven and bake for 14-16 more minutes, until the topping is light golden brown. Place the pan on a wire rack to cool
.

💗Let cool for 30 minutes, then chill for 30 minutes or more to firm up.


❃Storing Oatmeal Jam-Filled Bars

These bars freeze really well. I recommend cooling completely and slicing into bars before freezing.
