  • Unsalted Butter - softened
  • Eggs - large, room temperature
  • Light brown sugar 
  • Vanilla extract
  • All-purpose flour 
  • Baking soda
  • Cinnamon and salt
  • Quick Oats
  • Toffee bits
  • Coconut flakes
  • Chopped Nuts (optional)

🔆How To Make Oatmeal Toffee Cookies


  • In a stand-up mixer, beat butter, brown sugar, eggs, and vanilla until well blended. Add flour, baking soda, cinnamon, and salt; beat until blended
  • Stir in oats, toffee bits, and coconut.

Use a cookie scoop and place balls on a prepared cookie sheet 2 inches apart.

  • Bake for 8 to 10 minutes or until edges are lightly browned.
  • Make sure you let the cookies sit on the cookie sheet for a few minutes or they will fall apart when you transfer them to the cooling rack.
  • Makes about 48 cookies

🔆Can I Freeze Oatmeal Toffee Cookies?

Freeze them in a single layer on a cookie sheet for about 30 minutes, then I toss them into ziplock freezer bags.
