Making the cookies:
Mix cake mix and pumpkin puree in a bowl until combined. Mix in chocolate chips.

Just 3 ingredients in this recipe
- 1 - 15.25 oz box Carrot or Spice cake mix
- 1 - 15 oz. can Pumpkin Puree ( NOT pumpkin pie mix)
- 1 cup chocolate chips + 1/4 cup for topping
- Optional - 1 teaspoon ground cinnamon
Making the cookies:
Just a few steps to make these cookies and one bowl
Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
Mix cake mix and pumpkin puree in a bowl until combined. Mix in chocolate chips.
- Drop medium scoops of dough 2 inches apart onto the prepared baking sheets. Place extra chocolate chips on the dough, and bake.
- Bake in the preheated oven until edges are golden, 12 to 14 minutes. Cool on the baking sheet briefly before removing it to a wire rack to cool completely.
Add-ins:
- Add chopped walnuts
- Sprinkle coarse sea salt on warm cookies
- Drizzle with icing
- Frost with cream cheese frosting
Storage
- Store in the refrigerator for up to 5 days in an airtight container.
- Freeze cookie dough in an airtight container in an airtight container for up to 1 month. Baked cookies can be frozen for up to 3 months in an airtight container.
