These chewy and soft delights are loaded with butterscotch chips for a gooey, caramel-like taste. Savor them on their own or indulge in a double treat by adding a dollop of ice cream. I whipped up a batch, and before I knew it, poof! They vanished into thin air.






What is a Butterscotch Blondie? 
If you have a sweet tooth, you'll love a Blondie treat! Think of it as a cousin to the classic chocolate brownie, with a similar baked texture and a golden color. 

This heavenly confection combines the richness of brown sugar, the velvety smoothness of butter, and the luxuriousness of vanilla, resulting in an irresistible temptation.

What You will need for this recipe


Wet Ingredients:
Butter - Unsalted
Eggs - room temperature
Vanilla extract - Pure extracts enhance the flavors of baked goods.

Dry Ingredients:
Brown Sugar - light brown sugar
All-purpose Flour
Baking powder
Salt
Butterscotch chips - Caramel chips can be used
Optional Add-ins - Chopped pecans, macadamia nuts, and toffee bits.

Step By Step Instructions 
  • Heat oven to 350°F


  • In a saucepan, heat butter* over medium heat for 6 minutes, stirring occasionally, until lightly browned. Pour into a small bowl, and cool for 10 minutes.


*(Why brown butter? It turns butter a brown color and takes on a deeper, nuttier flavor than regular melted butter. As the butter browns, you’ll notice there are bits at the bottom of the pan. These are good! They are actually milk solids that have cooked faster and will give even more flavor to your recipe. Don’t leave the bits behind. )

  • In a large bowl mix brown sugar, flour, baking powder, and salt. 

  • Add eggs, and vanilla extract to the bowl with browned butter: stir with a whisk. Pour the butter mixture over the flour mixture, add butterscotch chips; stir just until moistened. Spoon batter into pan: smooth top with a spatula.

  • Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely in the cake pan on a cooling rack.

Even though these bars may not appear fully done. They will firm up once they've cooled around 1 hour.

🤎If you want them to last even longer, you can store them in the fridge for up to two weeks or in the freezer for up to three months.
